Heather's Funeral Potatoes
Made by a home cook who doesn't measure anything.
8 medium sized russet potatoes, skins on. Wash, remove eyes, and stab with fork so they cook faster. Realize there is no cheese grater where you're making them for grating the potatoes. It doesn't matter though When they're finally very soft, slice them into thin medallions. Layer in the bottom of a 9x13 disposable casserole dish. We're making funeral potatoes, not launching rockets. Form doesn't matter.
1 cup sour cream. Original recipe called for 2 cups, but we only had 1 and I really don't like sour cream like that anyway. Mix in there awkwardly by hand.
Chicken broth. Spoon over potatoes so they all get two or three spoonfuls. I didn't measure. Somewhere in the ballpark of a 1/2 cup maybe. Meh.
Onion flakes and garlic powder. Cover potatoes with them. Keep going until the ancestors tell you to stop. Don't you dare substitute with chopped uncooked onions. The people who do that don't deserve to see God.
Cheese. Again, no cheese grater. You can use a blender to grate cheese. Did you know that? I didn't. That blender had cheddar, mozzarella, and colby blended in it. I got some combination of those in a medium sized bowl. Enough that every bite has cheese, but you might be worried you don't have enough. It's fine though. Sprinkle across the top and redistribute by hand as needed.
Panko breadcrumbs. Enough to cover the top in a thin layer. This is a superior choice over potato chips, corn flakes, crackers, or whatever other thing y'all be doing at the church potluck. This superior choice is brought to you by the stake Relief Society president who gave me her family's recipe.
The recipe I used didn't give a time or temperature. We did 350°F until that Panko was just starting to brown. The softer you boil the potatoes, the less time it's going to take.
Best funeral potatoes I've ever had because I was making them based on what I like, not what everyone else is doing.
